Whether you are local or visiting the great city of Juneau we can handle your custom fish processing needs. One of the biggest draws to Alaska as a tourist destination is our untouched great outdoors and all of the activities that go along with it. This, of course, includes the “must-do” charter boat fishing. But what do you do with that fish once you get it reeled in? At Alaska Seafood Company we have a large variety of processing options, 30-plus years of experience in the industry, and if we process your fish, we will store it free of charge until you get home then make arrangements to ship it to you. We always contact the customer prior to shipping to make sure you are available and ready to receive it, as this is the best way to avoid shipping mishaps.

We guarantee you will receive your fish. We have a very accurate tracking system to follow your fish from the time it arrives until it is sent to your home.

Allow 1 – 4 weeks for your fish to be processed and sent to you, dependent on time of the year.

We will call you on all refrigerated products before shipping to co-ordinate a good date for you to receive your fish.

Custom Fish Processing: Fresh Packed

Have your salmon or halibut carefully filleted and hand packed into a clear poly vacuum bag and flash frozen to best ensure quality. We normally pack your fish for a two-person serving, each 2 person serving size is approx. 1 pound.

Custom Fish Processing Hot smoke

Also known as a kippered salmon, traditionally the best seller and most popular on the West coast. The Northwest favorite. Your catch is meticulously filleted, portioned, and brined in our salt / brown sugar brine recipe. Afterward, we smoke it in our computer-operated smokehouse with Alderwood smoke. There it is cooked and the moisture content is preserved for your eating enjoyment. We Vacuum pack your finished product in approx. ¾ – 1 lb. packs for your eating pleasure. Additionally, we DO NOT add nitrites or nitrates or any other artificial preservatives. Refrigerated shelf life is 4 – 8 weeks. Place in freezer for longer storage without quality loss.

Custom Fish Processing: Cans

We will hand fillet your catch and cut into strips and hand pack into a 6 oz can (tuna size) for your eating convenience. It is then cooked and labeled with a fun label suitable for gift giving. You may choose fresh-pack with enough salt to enhance flavor or smoked for canning. No nitrites or nitrates or artificial preservatives added only a little brown sugar to soften the smoke. Additionally, they have a 5-year shelf life.

Custom Fish Processing: Jars

Looks Great, Taste Great! Want to send a shelf-stable gift to a friend where they can see what’s inside, try our Jars. Our jars are hand filleted,  professionally smoked, and hand packed to a 6.5oz weight and jarred to give a great taste and a 7 shelf life. And we add no nitrites or nitrates or other artificial preservatives.

Custom Fish Processing: Pouches

The same technology tried and trusted by the U.S. Military’s (Meals Ready To Eat), these pouches are lightweight, flexible, easy to pack around, and have a 7-year shelf life. And each pouch contains a full portion instead of strips. The products are hand filleted and portioned as well as professionally smoked. Each pouch contains 1 portion of approximately 8oz, depending on the size of your fish. Rest assured that you will receive all of your fish back in portion sizes adjusted to make each pouch as equal in weight as possible.

Custom Fish Processing: Lox / Lachs

Known for its soft texture, typically sliced thin for use with cream cheese on a bagel. We fillet your salmon, and then use our special dry brine process to prepare your fish to be finished in the smokehouse with Alderwood smoke. Afterward, we vacuum pack it in ¾ – 1 lb. unsliced portions for maintaining quality. May be easily sliced while semi-frozen with a sharp knife cut on a bias. Additionally, as with all of our products, No nitrites or nitrates or artificial preservatives added. 4 – 6 week refrigerated shelf life. Keep in freezer to maximize quality.
